东华第一涮—东来顺

“东来顺”始建于1903年,创始人是位名叫丁德山的回民。当年,他在东安市场里摆摊,由于生意日渐兴隆,便取正式挂起东来顺的招牌。后来随着店面的发展和菜品的迭代,到了20世纪20年代,东来顺以选料精、加工细、佐料全、火力旺的独到之外,一越而成为京城涮羊肉之冠。

"Donglaishun" was founded in 1903 by a Hui people named Ding Deshan. At that time, he set up a stall in Dong'an Market, and because his business was booming, he took the official signboard of Donglaishun. Later, with the development of the store and the iteration of the dishes, in the 1920s, Donglaishun became the leader of the capital's hot-boiled lamb with the uniqueness of fine selection of ingredients, fine processing, complete seasoning, and strong firepower.

东来顺对羊肉的质量,是从羊的产地、种类、羊龄到用肉部位都有严格的规定。涮羊肉肥而不油,瘦而不柴,一涮即熟,久涮不老,吃起来不膻不腻,味道鲜美。

Donglaishun has strict regulations on the quality of mutton from the place of origin, type, age of the sheep to the parts used for the meat. Instant-boiled mutton is fat but not greasy, lean but not tender. It is cooked in one instant and won’t be overcooked after a long time. It tastes delicious without being greasy.
